Toasted Brussels Sprouts

Finding time to cook dinner during the week and maintaining a (somewhat) healthy diet is very difficult to do. I have started to keep a few simple recipes in our dinner rotation, including these somewhat healthy Toasted Brussels Sprouts! I added pecans to the brussels sprouts for myself and the bacon for Alex of course. This side pairs perfectly with steak, chicken, or fish. On this occasion, I paired it with pesto salmon, which is beyond easy to make as well. I just top each piece of salmon with pesto, bake at 425 degrees for 12-16 minutes and boil for 2 minutes to finish. I have induced the full recipe for the Toasted Brussels Sprouts below. Enjoy! xoxo

Print Toasted Brussels Sprouts Recipe

1 pound thick-cut bacon

2 pounds Brussels sprouts, trimmed and halved

extra virgin olive oil

salt and pepper

3 tablespoons unsalted butter

2 cups coarsely chopped pecans

balsamic reduction

Preheat the oven to 400 degrees. Arrange bacon slices on a baking sheet and bake until crispy (about 20 minutes). Cut horizontally and set aside. Toss Brussels sprouts with olive oil, salt, and pepper, then arrange on a baking sheet cut sides down. Roast until browned and the edges are crisp. In a sauté pan, melt butter and add in pecans, stirring frequently until toasted (about 5 minutes). Remove from heat and set aside. Transfer Brussels sprouts to a large mixing bowl. Add cut bacon, and toasted pecans, and top with balsamic reduction. This dish is best when served warm. SaveSave SaveSave

We have been so busy working on our new house, that summer has flown by. I finally took a break from decorating to make time for a date night and enjoy the last few weeks of Dallas heat. I bought this black ruffle set around my birthday for an outdoor concert and it was perfect for our dinner on the patio at Dolce Riviera.

 This black ruffle set from Free People is perfect for the 100+ degree weather we have all summer. I wear the skirt high on my waist, so that it looks more like a dress, but it can be worn lower to show a bit of midriff. The material breathes really well and doesn’t show sweat, which makes it perfect for any outdoor event. I paired it with some classic black strappy heels and my favorite Rebecca Minkoff clutch. I have always enjoyed cooking, and now that I have a new kitchen I have been cooking more than ever. Alex doesn’t have a very big sweet tooth, but the one thing he does request is my warm chocolate chip cookies à la mode. I like to make them with dark chocolate chips and pecans, but I often substitute semisweet chocolate chips for friends who don’t like dark chocolate. For years people have been asking for the recipe for my chocolate chip cookies, so I finally decided to share it with everyone! xoxo

Print Chocolate Chip Cookie Recipe 

1/2 cup softened butter

1 cup brown sugar

3 tablespoons granulated sugar

1 egg

2 teaspoons vanilla extract

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

1 3/4 cups flour

6 ounces chopped pecans

6 ounces dark chocolate chips

Cream the butter with sugar until fluffy.

Beat in the egg and vanilla extract.

Combine and sift all dry ingredients, then beat into the butter mixture.

Stir in dark chocolate chips and pecans. If you do not like dark chocolate or pecans, substitute with 8 ounces of semisweet chocolate chips.

Use a cookie scoop to place dough on cookie sheet about an inch apart.

Bake at 375 degrees for 8-10 minutes. I use a convection oven, and they are done in 8 minutes.

Makes about 2 dozen cookies.

Is it obvious that I want to be back at the beach? I am already trying to convince Alex that it is time for another vacation, and I am not sure he is taking the hints (wink wink). When I started buying swimsuits this season I am pretty sure I ended up with 90% one pieces and most were black (of course). For some reason, I decided to channel my inner Baywatch and buy this red swimsuit. Color is so not my thing, but for some reason I ended up really loving this red swimsuit almost as much as the black swimsuit I shared a few weeks go. I am wearing a size 2, and it fits perfectly. In my post about the black one piece I also wore in Punta Cana, I talked about how well J.Crew swimsuits cover the backside. Our wedding photos and video are finally here and I am so excited to share them with you! Everyone told me our wedding day would be a blur but I had no idea how quickly it would really come and go. I am so grateful that we have so many amazing photos and a video to help us remember all the details of our wedding day. We were so thankful for all the family and friends who helped up plan and celebrate over the past few months, it was everything we dreamed of!

For everyone who asked about our vendors, my bridal gown was from Patsy’s Bridal, the bridesmaid dresses were Alfred Sung, from Nordstrom, and the tuxedos were rented from Culwell & Son. The cakes were from Panini Bakery, our DJ was Monte Slaver, calligraphy was by Kimi Nguyen, invitations were from Embossed Graphics, and our florist was Junior at The Garden Gate. For hair and makeup we used Brittany Jones, except Sam Yee at Park Plaza Salon did my hair. Our ceremony was at Park Cities Baptist Church, Ellis Chapel and the reception was at The Park City Club. I would highly recommend all the vendors we used and would be happy to answer any specific questions. Hope everyone enjoys our video and a few of our wedding photos! xoxo

Today is my 25th birthday! It is hard to image that I am a quarter of a century old when I still feel like I am 10 most days. I never thought I would be married, own a home, or still running a blog at this point in my life – but I am couldn’t be more happy with where I am! I wanted to share the five most important things I have learned in 25 years (and this amazing black dress!). I have learned that family and friends are always the most important, everything that happens is always a part of a larger plan, don’t take things so personally from others, treat others better than you want to be treated, and it is impossible to please everyone. There is a story behind each of these lessons, but no one has time for that 🙂 I cannot wait to see what I learn in the next 25 years!

Outfit details: I am wearing a black linen dress by Free People, paired with raffia woven wedges from Schutz. This dress is perfect for summer heat and so easy to dress up or dress down! It was perfect to wear out to dinner and on a night with friends. I love the details on the sleeves and the buttons down the front of the midi length dress.
