All dressed up and staying home. Throughout quarantine it has been nice to dress up once a week to feel more human, even if we are just sitting in the living room. While restaurants and hair salons have started to open, we are doing our best to stay home and help decrease the spread of COVID in Dallas. This white eyelet dress caught my eye a few weeks ago and couldn’t pass it up on J.Crew’s latest sale. I am hoping that by the end of summer I will have a few excuses to wear it besides happy hour in my living room. This dress fits true to size (wearing a 0) and the silhouette is very flattering. I love the simple elegance of a white eyelet dress for all summer activities. It is the perfect piece for showers, birthdays, barbecues, crawfish boils, dinner al fresco, Fourth of July, Memorial Day and Labor Day. What day are we on now? Day 55? I am so thankful that I have a stocked kitchen to keep me sane during quarantine. I have loved spending this extra time testing recipes I would normally claim to be too busy for. Between the wild and fun recipes, I have discovered some great staples. Spaghetti Carbonara has quickly become one of my favorite quarantine meals because it is the perfect way to use leftover vegetables. I easily find myself left with odds and ends in my crisper drawer and hate to throw out produce at the end of the week. My favorite combination is shallot, prosciutto, mushrooms, and English peas (except Alex hates them) but I have also used spinach, broccoli, asparagus, and chicken. Take the extra time this week to create your version of Spaghetti Carbonara using leftover produce in your kitchen. Enjoy! xoxo
Heat 6 qt. water in a large pot over high. When water starts to boil, add spaghetti and salt. In a large skillet or medium dutch oven, heat canola oil over medium. Add the sliced shallot and minced garlic, cooking until fragrant. Add prosciutto and mushrooms, stirring often until prosciutto is crispy, about 4 minutes. In a medium bowl, whisk eggs, Parmesan, and Italian seasoning. Once the spaghetti is al dente, use tongs to add spaghetti to the prosciutto mixture and remove from heat. Reserve 1/3 cup of spaghetti water. Slowly add the hot water to the egg mixture, and whisk the mixture well while adding water. Pour egg mixture over spaghetti and combine. Add additional Parmesan cheese and red pepper flakes to your liking.
Mother’s Day is on May 10th, which is three weeks away. Thanks to COVID-19, shipping is taking longer and three weeks out doesn’t seem so silly. Day 33 of quarantine…. okay I may not be as introverted as I once thought! The day we heard about the “shelter in place” order I bought some puzzles and we made a movie list. I guess Alex was too busy with sports as a kid to watch movies, but he had not seen a ton of classics like Forrest Gump, Sound of Music, Saving Private Ryan and Jaws. We made a list of movies he had never seen and have been using a random number generator to cross them off our list. Since I apparently had more time to watch movies as a kid, I decided to share my quarantine approved movie list! I listed these movies in order of year released and highly recommend giving these older movies a fair try before crossing them off for being “old”. All of the movies on this list I would consider classics that I would recommend to anyone. I purposely left off romanic comedies, even though I am a sucker for You’ve Got Mail. If you have a hard time finding some of these on Netflix, Vudu has most for free with ads and Reelgood is a great source to find where to stream. We are on day 26 of the “shelter in place” order and I am getting very antsy. We are both working from home and really only leave our house to walk the dog (a few times a day) and go to the grocery store. We are sad to be canceling plans like Easter with family and our May trip to the UK. I am very hopeful that we can all do our part and get life back to normal sooner than later.
Since I am hardly (really never) leaving my house, I have been living in my favorite Lululemon leggings. While they are the most comfortable leggings in the world, I occasional miss getting dressed up for the office. I have made a new rule, that I going to put on real clothes at least once a week. Last week I threw on my favorite boyfriend jeans and this white spring sweater to pick up dinner and dine al fresco. Happy April! March seemed so long and I am hoping that the next month at home goes by much faster. I have been living in leggings and it felt so nice to take my hair out of a pony tail and throw on a spring dress!
I ordered this navy gingham dress about a month ago and had planned to wear it with white shoes and a white handbag for Easter. It was back ordered, so by the time it arrived COVID-19 already had us sheltering in place. This dress fits oversized, I recommend ordering a size down (wearing XS). I love how the sheer gingham pattern looks over the solid slip and that it has sleeves. Since we won’t be seeing anyone on Easter, I left the handbag in my cart and paired the dress with existing pieces in my closet.
